Hailing from the Blue Ridge Mountains of North Carolina, Matt Limbaugh has been immersed in the culinary world since the age of 16. After moving to Vail in 2006 to chase the love for the mountains, he quickly became known for his vibrant, globally inspired dishes, and deep passion for hospitality.
With over two decades of experience, Matt brings creativity, precision, and soul to every plate. At Root and Flower he blends bold flavors and eclectic influences to elevate small plates to higher levels than just your standard “bar food”.
Outside the kitchen, Matt finds inspiration in his love for the outdoors. Whether he’s camping in the high country, foraging for mushrooms, riding motorcycles, or out fishing, the love for mountains and food fuel his creativity
