Paloma Bilson is one of six female owners of Dilecta Wines in Paso Robles, where she crafts bold, expressive wines that celebrate terroir, artistry, and the joy of living well. Her passion for fermentation began in childhood while growing up in Angola during the civil war, where she experimented with rustic fruit wines alongside her father and grandfather. Years later, that early curiosity evolved into a California winemaking journey when she acquired an 8.5-acre vineyard property in Paso Robles and launched Dilecta Wines with her son, assistant winemaker Andre Minassian.
Dilecta’s wines have received critical acclaim, including a 97-point score from renowned critic Jeb Dunnuck. Known for voluptuous Rhône-inspired blends, striking artwork, and a philosophy that life is too short to drink bad wine, Bilson brings a spirit of adventure, storytelling, and global perspective to every bottle she produces.
