Kevin grew up in the Pacific Northwest and started his culinary career in Seattle, WA over 30
years ago. He landed a job with The Four Seasons Hotel and Resorts at the age of 19 as a Cook
III shucking oysters and making salads. Chef Kevin’s career with The Four Seasons took him to
many beautiful places such as The Ritz Carlton Chicago, The Four Seasons Vancouver, The Four
Seasons Manele Bay and The Lodge at Koele on the tiny island of Lana’i, Hawaii and now to
Leonora located inside of The Sebastian Vail, CO.

Kevin and his family moved to Vail in 2014 with The Four Seasons and held the position of
Executive Chef. In his time at the Four Seasons, he was responsible for the enhancement of
Flame and the creation and launch of The Remedy Bar food concept. He then worked in Beaver
Creek where he was executive chef of Beano’s Cabin for 5 years, updating Allie’s Cabin with a
Northern Italian menu style. He now is the Executive Chef for Leonora at The Sebastian Vail

Leonora offers an inviting dining experience inspired by the French Alps, Spanish Pyrenees and
our own Colorado Rockies. Using only the finest fresh, local and organic ingredients, the menu
is designed as a tapas experience one where diners embark with shareable small plates and
progress to larger, seasonally inspired plates. Dishes are simply prepared and thoughtfully
paired with wines from around the world. Our sommelier’s handpicked selections are sourced
from traditional and unexpected places, each selected to complement Executive Chef Kevin
Erving’s playful yet sophisticated menu.

Chef Kevin is passionate about food, quality, and seasonal ingredients. “My philosophy on food
is simple; treat each ingredient with the respect it deserves and don’t overcomplicate it.” Chef
Kevin lives in EagleVail with his wife Jennifer, a teacher with Eagle County Schools, son Carter
(15), and daughter Sophia (12). When Kevin is not in the kitchen, he enjoys mountain time with
the family, camping, snowboarding, fishing, hiking, and biking.
